The story
Nihari is a dish steeped in the rich culinary history of the Indian subcontinent. Its origins lie in the Mughal era, particularly in the kitchens of Old Delhi and the Awadhi courts of Lucknow. The word 'Nihar' comes from the Arabic 'Nahar', meaning "morning". It was a hearty stew traditionally cooked overnight and enjoyed by Nawabs (royalty) after their morning prayers. The slow cooking process transformed tough cuts of meat into incredibly tender morsels, infused with a symphony of warming spices. This nourishing stew became a favorite during Ramadan, offering sustenance after a long day of fasting.
