Tribal People Try Sandwiches

A sandwich is anything between two slices of bread, and most countries have a favourite: the American club, the British cheese and pickle, the Vietnamese banh mi, the grilled cheese. Subway made the long sandwich a chain.

Cold fillings between cold bread are the sticking point — village food is served hot. Toasted or grilled sandwiches do far better than cold ones, and anything with a fried egg or spiced chicken is accepted immediately.

Roti and salan is the original sandwich here. Sliced white bread is shop-bought, used mostly for breakfast with tea, so a filled sandwich as a meal feels like a snack pretending to be dinner.
