What to watch for

Street food travels well because it is hot, fried and cheap in every country. Grilled corn with mayo and cheese (elote) is the odd one — corn is roasted plain with lemon and salt here — and satay's peanut sauce is new but liked.

The village has a chaat wala and a pakora stall in every bazaar. The standard is high and the comparison is immediate.
