What it is

Mexican food: tacos, burritos, enchiladas, tamales, guacamole, salsas of every heat. Corn, beans, chilli, lime and coriander are the foundations, which is why it lands so easily in a Punjabi village.

What to watch for

This is the foreign cuisine the tribe takes to fastest. Fresh chilli and coriander are their own kitchen; corn tortillas taste like makai ki roti; beans are lobia and rajma. Avocado is the new ingredient, and cheese and sour cream are the only real hurdles.

The village comparison

Makai ki roti with saag is the winter meal of Punjab, so a corn tortilla is not exotic. The comment 'this is our food with different names' comes up regularly.
