Tribal People Try Curry
Every time the tribe has tasted curry: 4 videos of first impressions from villagers in rural Punjab, Pakistan, usually Pakistani food they have never seen before.
Also covers: curries, karahi, kadhai, korma, qorma, nihari, haleem, salan, masala, rogan josh, vindaloo, japanese curry
Curry is the western word for the whole family of South Asian gravies: karahi, korma, rogan josh, vindaloo, Japanese katsu curry, Thai and Malaysian curries. In these videos a 'curry' from a jar or a restaurant abroad meets people who cook the real thing daily.
The tribe are the experts here, and a supermarket korma or a Japanese curry block gets graded like a student's homework — usually kindly, sometimes not. British curry-house dishes like chicken tikka masala are recognised as distant relatives.
Salan is the everyday word: an onion-tomato-ginger-garlic base, meat or vegetables, whole and ground spices, cooked until the oil separates. Anything called curry is compared to that morning's salan.
If you cook it: Fry the onions properly — a full fifteen minutes to deep gold — before anything else goes in. That is where the flavour is.
