Tribal People Try Chicken

Chicken cooked in every tradition: roast chicken, rotisserie, chicken tikka, wings, nuggets, chicken parmesan, Nashville hot chicken. Chicken is the meat the tribe eat most, so the interest is in the method.

A whole roast chicken with just salt, pepper and herbs is the interesting case: familiar meat, unfamiliar restraint. It is usually judged good but under-spiced. Anything marinated and grilled is approved at once.

Desi chicken — small, tough, deeply flavoured village birds — in a karahi or a curry is the standard. Soft, fat supermarket chicken is a texture difference the tribe notice before anything else.
