Tribal People Try Cheese

Cheese in its many forms: cheddar, mozzarella, blue cheese, brie, feta, string cheese, American slices, and the smelly aged ones that videos are built around. The village makes paneer; it does not age cheese.

Mild cheese is accepted; aged and blue cheese is not. The smell of a blue cheese is enough for most, and the taste — salty, sharp, mouldy on purpose — is described in words we cannot print. Melted cheese on something hot is the safe route.

Paneer is fresh, unsalted and mild, made at home from boiled milk and lemon. Every cheese is placed somewhere on the scale from paneer to spoiled milk, and the strong ones land at the wrong end.
